I was wondering if you needed some sort of education to become an officer or could you just rise through the ranks with just you highschool diploma
 
It's mandatory for all officers to possess a university degree. The only exception to this is the Commissioning from the Ranks program (CFR), this is a rare occurrence though and only occurs towards the end of your NCM career, if it's offered to you.

There are a few other exceptions too, but they are big exceptions, and involve you committing (ie signing something) saying you will complete a Uni Degree in X amount of time (usually a few years from now)

What if you went through  the ranks and decided that you wanted to become an officer, could you drop out of the army and take the colledge courses and then re enlist?
Or do you have to drop out at all? Could you just take the courses through the army  and then spend the years in the army that you owe and then continue with your career as an officer?
 
There's a program called  the university training plan for non commissioned members (UTPNCM) that pays for NCMs to go to university and then get commissioned after they're done. It's extremely competitive though so I wouldn't plan your career around getting accepted for that program.
