My wife and I enjoy taking one or two "fun" courses a year, but we've recently moved to Kingston and don't know our way around.  This year, I'm hoping to take high speed driving or shooting training, but don't know where to find these places.  I realize I'll have to go into the States for the shooting course.

Can anyone help out?

I'm not sure how far you are willing to travel into the States, but the Lethal Force Institute shooting courses are fantastic.  Here's a link to their 2007 schedule.

Shamrock    here is a local race track there in Shannonville witch is right beside Belleville Ont  they have drag racing motorcycle racing at what levels I really don't know but here is the web site    http://www.shannonville.com/

IIRC, Spenard David Racing School still offers driving courses at both Mosport and Shannonville racetracks.  St Lawrence College has motorcycle riding classes.  The flying club at the airport offers some pretty good lessons for a fraction of the cost of larger cities and the practice area is closer so one gets more flying time as opposed to spending 10-15 mntues each way to the practice area (as we do here in Ottawa).  Drop into to see Dr. Ron Haycock at RMC in the History Dept, he'll know where all the shooting clubs are around the area (he has the largest collection of Ross Rifles I've ever seen) and if he likes you, he may invite you to go shooting with him...
